Chicken Fried Rice with Peas and Carrots Recipe

A fast, easy stir-fry with a slightly sweet flavor the whole family will love.

Ingredients

  • 3 eggs, beaten
  • 3 green onions, chopped (about 1/4 cup)
  • 1/4 teaspoon salt
  • 4 cups cooked rice
  • 1 can (15 oz) Le Sueur® Very Young Small Sweet Peas with Mushrooms & Pearl Onions, drained
  • 1 can (15 oz) Le Sueur® Tender Baby Whole Carrots, drained
  • 2 cups cut-up cooked chicken
  • 1/3 cup stir-fry sauce

Instructions

  1. Spray a 12-inch skillet with cooking spray. Heat skillet over medium high heat and add eggs, green onions and salt. Cook 2 minutes, stirring frequently, until eggs are set.
  2. Add remaining ingredients; cook 2 to 4 minutes, stirring frequently, or until heated through.
